I know you can export my movie list as a text file but is there a way to export it into an excel spreadsheet?

I've noticed a lot of the movie information is missing when adding in my collection and it would just be easier if I could export it into excel and work on it there.

Excel can read both tab and comma delimited (CSV) so either one of those text format export options in DVDpedia should work fine for import into Excel. Working directly with the Excel format is quite difficult.
